Ingredients for Spicy Jalapeño Popper Soup:

4 fresh jalapeños, chopped (remove seeds for less heat)

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup milk

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh cilantro, for garnish

4 slices of sandwich bread

4 slices of cheddar cheese

Instructions:

1. Sauté Aromatics:
In a large pot, heat olive oil over medium heat. Add jalapeños, diced onion, and minced garlic. Sauté for about 5 minutes until the onions are soft and translucent and the jalapeños begin to release their aroma.

2. Simmer the Base:
Pour in the chicken or veggie broth. Bring to a boil, then reduce heat and let simmer for 10 minutes to develop the flavor.

3. Make It Creamy:
Add in cream cheese, shredded cheddar, and milk. Stir until the cheeses melt. For a smooth texture, use an immersion blender to blend the soup fully. For a chunky soup, blend only half.

4. Season and Simmer:
Stir in smoked paprika, salt, and pepper to taste. Simmer for an additional 5 minutes to thicken and combine flavors.

While the soup simmers, prepare your grilled cheese dippers. In a skillet, toast bread slices with cheddar cheese inside until golden brown on both sides and the cheese is melted. Slice into strips for dipping.
