    Creamy Golden Chicken Bowl with Herb Potatoes & Fluffy Rice

    This Creamy Golden Chicken Bowl is a wholesome and satisfying meal featuring tender chicken in a turmeric-paprika cream sauce, paired with herb-seasoned potatoes and fluffy white or brown rice. It’s the perfect weeknight dinner or meal prep bowl that’s rich, comforting, and bursting with flavor.

    Cook Time: 30 minutes

    Ingredients:

    For the Creamy Golden Chicken:

    2 large chicken breasts, diced

    2 cloves garlic, minced

    1 small onion, finely chopped

    1 tsp paprika

    ½ tsp turmeric powder

    1 tsp curry powder

    ¾ cup heavy cream or coconut cream

    2 tbsp olive oil or butter

    Salt & black pepper to taste

    Fresh parsley, chopped

    For the Herb Potatoes:

    3 medium potatoes, peeled & cubed

    2 tbsp olive oil

    1 tsp dried oregano

    1 tsp dried parsley

    Salt & pepper to taste

    For the Rice:

    1 cup white or brown rice

    2 cups water

    Extra chopped parsley for garnish

     

    Instructions:

    1. Cook the Rice:
    Bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer until fully cooked and fluffy.

    2. Prepare the Potatoes:
    Boil cubed potatoes in salted water until fork-tender (about 10-12 minutes). Drain and toss with olive oil, oregano, parsley, salt, and pepper. Set aside.

    3. Make the Creamy Chicken:
    In a large skillet, heat olive oil or butter over medium heat. Sauté garlic and onion until fragrant. Add diced chicken, paprika, turmeric, curry powder, salt, and pepper. Cook until golden brown. Stir in cream and simmer until the sauce thickens and coats the chicken.

    4. Assemble Your Bowl:
    On each plate or bowl, layer cooked rice, herb potatoes, and creamy chicken. Sprinkle with fresh parsley and enjoy warm.

     

    Notes & Variations:

    Add a splash of fresh lemon juice for brightness and balance.

    Swap white rice with quinoa or cauliflower rice for a low-carb option.

    Use coconut cream for a dairy-free and tropical twist.
