Creamy Garlic Shrimp & Mussels with Toasted Garlic Bread

Ingredients:
For the Seafood
1 lb shrimp, peeled and deveined
1 lb fresh mussels, cleaned and debearded
2 tbsp olive oil
3 tbsp butter
5 cloves garlic, minced
½ cup seafood stock
1 cup heavy cream
½ cup Parmesan cheese, grated
½ tsp red pepper flakes (optional, for a spicy kick)
2 tbsp fresh parsley, chopped
Salt & black pepper, to taste
For the Garlic Bread
1 baguette or 4 ciabatta rolls
¼ cup butter, softened
3 cloves garlic, minced
1 tbsp fresh parsley, finely chopped
Pinch of salt
Instructions:
Step 1 – Prepare the Garlic Bread
1. Preheat oven to 375°F (190°C).
2. In a small bowl, mix softened butter, garlic, parsley, and salt.
3. Slice baguette or rolls, spread with the garlic butter mixture, and place on a baking sheet.
4. Bake for 8–10 minutes, until golden brown and crisp.
Step 2 – Cook the Mussels
1. Heat olive oil and 1 tbsp butter in a large skillet over medium heat.
2. Add half of the garlic and cook for 30 seconds.
3. Add mussels and seafood stock, cover, and steam for 5–6 minutes or until the mussels open. Discard any that don’t open.
4. Remove mussels and set aside, keeping cooking juices in the pan.
Step 3 – Cook the Shrimp & Make Sauce
1. Add remaining butter and garlic to the pan. Cook for 1 minute.
2. Add shrimp, season with salt, pepper, and red pepper flakes, and sauté for 2–3 minutes until pink.
3. Stir in heavy cream and Parmesan cheese, simmering until the sauce lightly thickens.
Step 4 – Combine and Finish
1. Return mussels to the pan and gently toss in the creamy garlic sauce.
2. Sprinkle with fresh parsley and adjust seasoning to taste.
