    Creamy Garlic Mushroom Chicken Thighs

    A luxurious yet simple weeknight dinner! These golden-seared chicken thighs simmer in a creamy garlic mushroom sauce that tastes like a restaurant meal but requires just one pan. Perfect for busy nights, meal prep, and comfort-food lovers.

    Ingredients:

    6 chicken thighs (bone-in or boneless)
    1 tbsp olive oil
    2 tbsp butter
    8 oz mushrooms, sliced
    4–5 cloves garlic, minced
    1 small onion, diced
    1 cup chicken broth
    1 cup heavy cream (or half & half)
    ½ cup grated Parmesan cheese
    1 tsp Italian seasoning
    ½ tsp paprika
    Salt & pepper, to taste
    Fresh parsley, for garnish

    Directions:

    Pat chicken dry. Season both sides with salt, pepper, paprika, and Italian seasoning.
    Heat olive oil in a large skillet. Sear chicken 4–5 minutes per side until golden and crisp.
    Remove and set aside.

    Melt butter in the same skillet.
    Add mushrooms and cook until browned, about 5 minutes.
    Stir in onion and garlic; cook until fragrant.

    Pour in chicken broth and scrape up the browned bits.
    Simmer 2–3 minutes.
    Reduce heat and stir in heavy cream + Parmesan.
    Cook until the sauce thickens slightly.

    Nestle chicken thighs into the sauce.
    Cover and simmer 15–20 minutes until tender and cooked through.

    Spoon the creamy garlic mushroom sauce over the chicken.
    Garnish with parsley and serve over:

    pasta
    mashed potatoes
    white rice
    cauliflower mash

    Extra Tips:
    Add spinach during the last 5 minutes for a creamy chicken and spinach variation.
    Use boneless chicken thighs for faster cooking.
