    Creamy Fajita Chicken Noodle Bake

    A cheesy, creamy Tex-Mex twist on comfort food! This easy Fajita Chicken Noodle Bake combines tender shredded chicken, colorful bell peppers, and perfectly cooked noodles in a rich, zesty fajita-style sauce. Every bite delivers creamy, cheesy goodness with bold southwest flavors perfect for family dinners or cozy nights in.

    Ingredients:

    4 cups cooked shredded chicken (about 3 large breasts)
    12 oz egg noodles (uncooked)
    1 (10.5 oz) can cream of chicken soup
    1 cup sour cream
    1 cup frozen diced onion and bell pepper blend
    1 (10 oz) can diced tomatoes with green chilies (like RoTel), undrained
    1 ½ cups chicken broth
    1 (1.12 oz) packet fajita seasoning mix
    2 cups shredded Mexican blend cheese, divided
    ½ teaspoon garlic powder (optional)
    ½ teaspoon chili powder (optional, for extra kick)
    Salt and black pepper, to taste
    Fresh cilantro or chopped green onions, for garnish

    Instructions:

    Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

    Boil egg noodles in salted water until al dente. Drain and set aside.

    In a large mixing bowl, combine shredded chicken, cooked noodles, cream of chicken soup, sour cream, onion and pepper blend, diced tomatoes with green chilies, chicken broth, fajita seasoning, and optional spices. Stir until well combined.

    Spread the mixture evenly into the prepared baking dish. Sprinkle 1 cup of shredded cheese over the top.

    Cover with foil and bake for 25 minutes. Remove the foil and bake another 10–15 minutes until hot, bubbly, and golden.

    Sprinkle remaining cheese on top and bake an additional 5 minutes until melted and gooey. Garnish with cilantro or green onions before serving.

    Serving & Storage:

    Serve warm for a satisfying Tex-Mex chicken dinner! Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
