    Creamy Crockpot Cream Cheese Chicken Chili Recipe

     

    This Crockpot Cream Cheese Chicken Chili is the ultimate comfort food, perfect for busy weeknights or cozy weekends. Packed with tender shredded chicken, creamy cheese, and bold spices, it’s a flavorful one-pot meal that’s incredibly easy to make. Simply layer the ingredients, let your slow cooker do the work, and enjoy a hearty, delicious dinner. Customize with your favorite toppings like cheddar cheese, sour cream, or tortilla chips for added flair. This recipe is a family favorite that’s both satisfying and simple!

    Ingredients:

    2 boneless, skinless chicken breasts

    1 can (15 oz) black beans, drained and rinsed

    1 can (15 oz) sweet corn, drained

    1 can (10 oz) Rotel diced tomatoes with green chilies (do not drain)

    1 package (1 oz) ranch seasoning mix

    1 tbsp chili powder

    1 tsp cumin

    1 tsp garlic powder

    1 tsp onion powder

    1/2 tsp smoked paprika

    1/4 tsp cayenne pepper (optional, for extra heat)

    1 block (8 oz) cream cheese, softened

    1/2 cup chicken broth

    Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, tortilla chips

    Instructions:

    Layer the Ingredients:

    Place chicken breasts at the bottom of your crockpot. Layer with black beans, corn, and Rotel diced tomatoes.

    Season Generously:

    Sprinkle ranch seasoning, chili powder, cumin, garlic powder, onion powder, smoked paprika, and cayenne pepper over the mixture. Pour in chicken broth.

    Add Cream Cheese:

    Place the softened cream cheese block on top of the ingredients.

    Cook Low and Slow:

    Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours.

    Shred the Chicken:

    30 minutes before serving, remove chicken breasts, shred them with forks, and return to the crockpot. Stir everything to blend the creamy flavors.

    Serve and Enjoy:

    Ladle chili into bowls and garnish with toppings like shredded cheddar, sour cream, green onions, or crunchy tortilla chips. Perfect for a comforting, hearty meal!
