    Creamy Chicken Casserole with Mushrooms & Garlic

     

    Looking for a family-friendly creamy chicken casserole that’s packed with flavor and easy to make? This Creamy Chicken and Mushroom Casserole features tender seared chicken breast, sautéed mushrooms, and a rich garlic cream sauce baked to bubbly perfection. It’s the ultimate weeknight dinner idea and a cozy comfort food recipe that everyone will love!

    Cook Time: 45 minutes
    Servings: 6–8
    Calories: ~430 per serving

     

    Ingredients:

    For the Chicken & Mushrooms

    2½ lbs chicken breasts, cut into 1-inch strips

    1½ tsp sea salt (plus more to taste)

    ¼ tsp black pepper (plus more to taste)

    1 cup all-purpose flour (for dredging)

    6 Tbsp olive oil, divided

    1 lb white mushrooms, thickly sliced

    1 medium onion, finely diced

    3 garlic cloves, minced

    For the Cream Sauce

    3 Tbsp unsalted butter

    3 Tbsp all-purpose flour

    1½ cups chicken broth

    1 Tbsp lemon juice

    1 cup half & half (or ½ cup milk + ½ cup heavy cream)

     

    Instructions:

    Prepare the Chicken
    Preheat oven to 350°F (175°C). Season chicken with sea salt and black pepper. Lightly coat each piece in all-purpose flour.

    Sear the Chicken
    Heat 3 Tbsp olive oil in a large skillet over medium-high heat. Sear chicken until golden brown (about 4–5 minutes per side). Transfer to a casserole baking dish.

    Sauté the Vegetables
    In the same skillet, add the remaining olive oil. Cook mushrooms for 5 minutes until browned; remove and set aside. Add diced onion and minced garlic; sauté 2–3 minutes until fragrant.

    Make the Creamy Garlic Sauce
    Melt butter in the skillet, then whisk in flour to form a roux (1–2 minutes). Slowly pour in chicken broth, whisking constantly. Add lemon juice and half & half. Simmer until thick and creamy.

    Combine and Bake
    Stir sautéed mushrooms into the sauce and pour over seared chicken in the baking dish. Bake uncovered for 25–30 minutes, until bubbly and the chicken is fully cooked.

    Serve
    Garnish with fresh parsley or thyme and serve hot with rice, mashed potatoes, pasta, or crusty bread.

     

    Tips & Variations:

    Use boneless chicken thighs for extra juiciness.

    Add baby spinach or peas for more vegetables.

    Try adding grated Parmesan on top before baking for extra cheesy casserole flavor.
