Ingredients:

1 lb chicken breast, diced

4 cups low-sodium chicken broth

2 cups vermicelli noodles

1 cup carrots, sliced

1 medium onion, chopped

3 cloves garlic, minced

2 tbsp soy sauce

1 tbsp fresh ginger, grated

1 cup spinach, chopped

Salt & pepper to taste

Fresh cilantro (for garnish)

Lime wedges (for serving)

 

Instructions:

1. Heat a splash of oil in a large soup pot over medium heat. Sauté onion and garlic until fragrant and golden.

2. Add the diced chicken breast, season with salt, pepper, and ginger. Brown the chicken for extra flavor.

3. Pour in the chicken broth and bring to a boil. Toss in the sliced carrots and cook for about 5 minutes until tender.

4. Stir in the vermicelli noodles and simmer for 3–4 minutes until they’re soft and springy.

5. Add the soy sauce and stir in the chopped spinach, letting it wilt gently.

6. Taste and adjust with extra salt, pepper, or a splash of lime juice if needed.

7. Ladle into bowls and top with fresh cilantro and a lime wedge. Serve piping hot!
