    Coconut Curry Noodle Soup with Fresh Lime & Herbs

    A soul-warming, creamy noodle soup infused with coconut milk, red curry, and zesty lime for a perfect weeknight comfort meal.

     

    Ingredients:

    Base Aromatics
    1 tablespoon oil (olive or avocado)
    1 small yellow onion, diced (about ⅓ cup)
    2 garlic cloves, minced
    1 teaspoon freshly grated ginger
    Vegetables
    ½ red bell pepper, diced
    ½ cup diced carrots
    Broth & Flavor
    3 cups chicken or vegetable broth
    1 cup full-fat coconut milk
    2 tablespoons red curry paste
    1½ tablespoons fish sauce
    Salt and pepper to taste
    Noodles & Garnish
    3 ounces ramen or rice noodles
    1 tablespoon fresh lime juice
    ¼ cup chopped fresh cilantro
    Lime wedges for serving

    Instructions:

     

    Heat oil in a large pot over medium heat. Add diced onion and sauté until translucent (3–4 minutes). Stir in garlic and ginger; cook for 1 minute until fragrant.

    Toss in red bell pepper and carrots. Cook for 3–4 minutes until slightly softened.

    Pour in chicken or vegetable broth and coconut milk. Stir in red curry paste and fish sauce. Season with salt and pepper. Bring to a gentle simmer for 5–7 minutes.

    Add ramen or rice noodles directly into the pot. Simmer until noodles are tender (about 4–5 minutes).

    Stir in lime juice and chopped cilantro. Adjust salt, lime, or curry levels as desired.

    Ladle into bowls, top with extra cilantro, and serve with lime wedges for that fresh citrus burst!
