Chicken Spinach and Mushroom Low Carb Oven Dish

Ingredients:
1 small bag of fresh baby spinach
1 dash pepper
1 dash herb and garlic seasoning
8 oz shredded mozzarella cheese
6 thin-sliced chicken breasts
1 container green onion cream cheese
1/4 cup olive oil
1/2 cup chicken broth
1 large package of sliced mushrooms
Instructions:
1. Preheat oven to 375°F. In a 9×13 pan, arrange the chicken breasts in a single layer, then top with fresh spinach and sliced mushrooms. Sprinkle with pepper and herb and garlic seasoning for extra flavor.
2. In a bowl, soften the green onion cream cheese. Whisk in olive oil and chicken broth until smooth, then pour this creamy mixture over the chicken and vegetables.
3. Cover the pan with a piece of foil (do not seal). Bake for 20 minutes. Remove the foil and bake uncovered for another 20-25 minutes. Sprinkle shredded mozzarella cheese on top, then bake uncovered for an additional 10 minutes or until the cheese begins to brown and bubble.
4. Let the dish cool for about 10 minutes before serving.
