Chicken Sausages with Zucchini, Tomatoes, and Pasta
This Chicken Sausage Pasta with Zucchini and Tomatoes is a light yet hearty weeknight dinner packed with flavor. Juicy Italian-style chicken sausages, tender pasta, fresh zucchini, and sweet grape tomatoes come together in a creamy Parmesan sauce for a quick 30-minute meal the whole family will love.
Ingredients:
1 tsp olive oil
12 oz Italian-style chicken sausages, sliced
1 cup diced onion
1/2 tsp salt
2 tsp minced garlic
½ tsp crushed red pepper (optional)
4 cups chicken broth
8 oz Radiatore pasta (or any small pasta)
2 cups chopped zucchini
2 tbsp lemon juice
1½ cup grated Parmesan cheese, divided
1 cup halved grape tomatoes
1/3 cup chopped fresh basil
Directions:
Brown the Chicken Sausage Heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausages and cook for 5 minutes until golden and cooked through. Transfer to a plate.
Sauté Aromatics In the same pan, add diced onion and salt. Cook 3–4 minutes until softened. Stir in garlic and crushed red pepper for 30 seconds.
Cook the Pasta Pour in chicken broth and bring to a boil. Stir in Radiatore pasta (or other small pasta). Cook uncovered for 9–10 minutes until al dente.
Add Veggies During the last 2–3 minutes, stir in zucchini and cook until just tender.
Finish the Dish Stir in lemon juice, 1 cup Parmesan, grape tomatoes, and cooked chicken sausages. Heat for 1–2 minutes until creamy.
Serve Remove from heat, sprinkle with remaining Parmesan and fresh basil. Serve hot.
