    Chicken Divan Recipe: So Simple and Delicious!

    Ingredients:

    – 1.5 pounds boneless, skinless chicken breasts, cooked and cubed
    – 4 cups broccoli florets, steamed
    – 8 ounces mushrooms, sliced
    – 2 shallots, finely chopped
    – 2 tablespoons butter
    – 2 tablespoons all-purpose flour
    – 1 cup chicken broth
    – 1 cup heavy cream
    – 1 cup shredded cheddar cheese
    – 1/2 cup grated Parmesan cheese
    – 1 teaspoon Dijon mustard
    – Salt and pepper to taste
    – 1 cup crushed buttery crackers
    – 2 tablespoons melted butter

    Directions:

    1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
    2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and finely chopped shallots. Sauté until the mushrooms are golden brown and the shallots are translucent, about 5-7 minutes.
    3. Sprinkle the flour over the mushrooms and shallots, stirring to combine. Cook for 1-2 minutes to eliminate the raw flour taste.
    4. Gradually whisk in the chicken broth and heavy cream. Bring the mixture to a simmer and cook until thickened, about 3-4 minutes.
    5. Stir in the shredded cheddar cheese, grated Parmesan cheese, and Dijon mustard. Season with salt and pepper to taste.
    6. In the prepared baking dish, layer the cubed chicken and steamed broccoli. Pour the cheese sauce over the top, spreading it evenly to cover.
    7. In a small bowl, mix the crushed buttery crackers with the melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.
    8. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly.
    9. Let the Chicken Divan cool for a few minutes before serving.
