Cheesy Taco Stuffed Potatoes Recipe

These Cheesy Taco Potatoes are the ultimate comfort food mash-up oven-roasted Russet potatoes loaded with seasoned taco beef and melty cheese. Perfect for TacoTuesday, weeknight dinners, or game day gatherings!

 

Ingredients:

1 lb lean ground beef

4 to 6 medium Russet potatoes

1 packet taco seasoning

1 cup shredded cheese (cheddar or Mexican blend)

Salt and pepper to taste

Optional toppings: sour cream, sliced green onions, jalapeños, salsa, or avocado

 

Instructions:

1. Preheat oven to 400°F (200°C).
Scrub potatoes clean and poke a few holes in each with a fork. Roast for 45–60 minutes, or until fork-tender.

2. Prepare the taco beef filling:
While potatoes roast, brown ground beef in a skillet over medium heat. Drain excess fat. Add taco seasoning and a bit of water (as directed on the packet). Simmer until fully seasoned and thickened.

3. Let potatoes cool slightly once roasted. Slice in half lengthwise and carefully scoop out some of the inside, leaving a sturdy shell.

4. Combine the scooped potato with taco meat. Mix until well combined.

5. Stuff each potato half with the cheesy taco mixture. Sprinkle generously with shredded cheese.

6. Bake again for 10 minutes, or until cheese is melted, golden, and bubbly.

7. Serve hot with your favorite toppings think sour cream, green onions, jalapeños, or fresh salsa!
