Cheesy Stuffed Potato Pancakes with Savory Beef Filling
Crispy on the outside, cheesy and meaty on the inside these Stuffed Potato Pancakes are the ultimate comfort food! Perfect for breakfast, lunch, or a cozy dinner, they’re packed with seasoned ground beef and gooey melted cheese.
Ingredients:
Potato Pancake Dough:
4 large potatoes, peeled and boiled
1 large egg
½ cup all-purpose flour
Salt and pepper, to taste
Savory Beef & Cheese Filling:
1 lb ground beef
1 small onion, finely diced
1 tsp garlic powder
1 tsp paprika
1 cup shredded mozzarella or cheddar cheese
Salt and pepper, to taste
For Frying:
3–4 tbsp vegetable oil
Instructions:
Prepare the Filling:
Heat 1 tbsp of oil in a skillet over medium heat. Sauté the onions until soft.
Add ground beef and cook until browned. Season with garlic powder, paprika, salt, and pepper.
Remove from heat, mix in the shredded cheese, and let cool.
Make the Potato Dough:
Mash the boiled potatoes until smooth.
Add the egg, flour, salt, and pepper. Mix until a soft dough forms.
Stuff and Shape the Pancakes:
Take a small handful of the potato mixture and flatten it.
Place a spoonful of the beef and cheese filling in the center.
Gently fold the edges over the filling and shape into a patty. Repeat.
Pan-Fry to Perfection:
Heat vegetable oil in a skillet over medium heat.
Cook each stuffed pancake for 3–4 minutes per side until crispy and golden brown.
Serve & Enjoy!
Garnish with fresh parsley or chives.
Pair with sour cream or your favorite dipping sauce.
