Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 lb baby potatoes, halved
1 cup beef broth
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper, to taste
1 ½ cups shredded cheddar cheese
1 tbsp olive oil
Fresh parsley, chopped for garnish
Directions:
1. Heat olive oil in a large skillet or pot over medium heat. Sauté the diced onions and bell pepper for 3-4 minutes until softened.
