    Cheesy One-Pan Rice Skillet

    This easy cheesy rice skillet is a flavor-packed, one-pan wonder that’s perfect for a quick and satisfying meal! Loaded with melted cheese, savory spices, and fresh toppings, this dish is great as a main course or a hearty side.

    Ingredients:

    1 cup long-grain white rice
    1 tbsp olive oil
    1 small onion, diced
    2 cloves garlic, minced
    1 can (14 oz) diced tomatoes, drained
    1 cup cooked shredded chicken (optional)
    1 1/2 cups chicken broth
    1 cup shredded cheddar cheese
    1 tsp chili powder
    1/2 tsp cumin
    Salt & pepper to taste
    1 avocado, diced
    Fresh cilantro, chopped
    Sour cream for topping

    Instructions:

    Step 1: Sauté the Aromatics

    Heat olive oil in a large skillet over medium heat. Add diced onions and sauté until soft. Stir in minced garlic and cook until fragrant.

    Step 2: Toast the Rice

    Add white rice to the skillet and stir for 2-3 minutes until lightly toasted. This step enhances the nutty flavor.

    Step 3: Add Liquids & Simmer

    Stir in diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes or until the rice is tender.

    Step 4: Add Chicken & Melt the Cheese

    Stir in shredded chicken (if using). Sprinkle cheddar cheese evenly over the rice, cover, and let it melt into gooey perfection.

    Step 5: Garnish & Serve

    Top with diced avocado, fresh cilantro, and a dollop of sour cream. Serve warm and enjoy this cheesy, hearty, and delicious dish!
