It’s layered like lasagna, but with soft tortillas, zesty taco beef, and creamy nacho cheese a perfect Tex-Mex casserole that’s ready in just 30 minutes. Ingredients:
1 pound ground beef
1 packet taco seasoning mix
1/4 cup water
1 can RoTel diced tomatoes with green chiles, drained
1 can nacho cheese soup
1/4 cup sour cream
1 cup shredded cheddar cheese
12 soft 8-inch flour tortillas
Optional toppings: guacamole, chopped cilantro, extra sour cream
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with non-stick spray.
- In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess grease.
- Stir in the taco seasoning and water; cook for 2 minutes until well mixed.
- In a separate bowl, combine the RoTel tomatoes, nacho cheese soup, and sour cream. Fold in the seasoned beef.
- Layer 3 tortillas in the bottom of the baking dish. Spread 1/3 of the taco meat mixture on top.
- Repeat layers two more times, ending with a final layer of tortillas.
- Sprinkle shredded cheddar cheese over the top layer.
- Bake uncovered for 20 minutes or until bubbly and the cheese is melted.
- Top with guacamole, cilantro, and a dollop of sour cream, if desired.
