Cheesy Mexican Taco Lasagna Casserole

If you’re craving the bold flavors of Mexican cuisine with a family-friendly twist, this Mexican Taco Lasagna is your next go-to meal! It’s layered like lasagna, but with soft tortillas, zesty taco beef, and creamy nacho cheese a perfect Tex-Mex casserole that’s ready in just 30 minutes. Great for easy weeknight dinners, potlucks, or a satisfying family fiesta!

Ingredients:

1 pound ground beef

1 packet taco seasoning mix

1/4 cup water

1 can RoTel diced tomatoes with green chiles, drained

1 can nacho cheese soup

1/4 cup sour cream

1 cup shredded cheddar cheese

12 soft 8-inch flour tortillas

Optional toppings: guacamole, chopped cilantro, extra sour cream

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with non-stick spray.
  2. In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess grease.
  3. Stir in the taco seasoning and water; cook for 2 minutes until well mixed.
  4. In a separate bowl, combine the RoTel tomatoes, nacho cheese soup, and sour cream. Fold in the seasoned beef.
  5. Layer 3 tortillas in the bottom of the baking dish. Spread 1/3 of the taco meat mixture on top.
  6. Repeat layers two more times, ending with a final layer of tortillas.
  7. Sprinkle shredded cheddar cheese over the top layer.
  8. Bake uncovered for 20 minutes or until bubbly and the cheese is melted.
  9. Top with guacamole, cilantro, and a dollop of sour cream, if desired.

Serving Tips:

Pair this cheesy taco lasagna with a side of Mexican rice, refried beans, or a fresh avocado salad. It also makes great leftovers!
