Looking for an easy and flavorful weeknight dinner idea? This Cheesy Mexican Taco Casserole is packed with seasoned ground beef, black beans, corn, zesty tomatoes, and a creamy cheese blend layered over crunchy tortilla chips. It’s the perfect Tex-Mex comfort food the whole family will love!

Ingredients:

1 pound ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) sweet corn, drained

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 package (8 oz) cream cheese, softened

1 cup sour cream

2 cups shredded cheddar cheese

1 package (8 oz) tortilla chips

1 teaspoon taco seasoning

Salt and pepper to taste

Chopped green onions, for garnish

Instructions:

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

3. Stir in the black beans, corn, diced tomatoes with green chilies, taco seasoning, salt, and pepper. Let the mixture simmer for 5 minutes, allowing flavors to blend.

4. In a separate bowl, whisk together the softened cream cheese and sour cream until smooth and creamy.

5. Layer half of the tortilla chips on the bottom of the baking dish. Spread half of the beef mixture over the chips, then layer with half of the cream cheese mixture. Sprinkle 1 cup of shredded cheddar cheese over the top.

6. Repeat the layers: remaining chips, beef mixture, cream cheese blend, and top with the last cup of shredded cheese.

7. Cover with foil and bake for 25 minutes. Remove the foil and bake an additional 10–15 minutes until the cheese is bubbly and golden.

8. Allow to cool slightly. Garnish with chopped green onions before serving.

 

Tips:

Add sliced jalapeños or hot sauce for extra heat.

Use ground turkey or chicken for a lighter option.

Serve with a side of guacamole, salsa, or a fresh salad.
