    Cheesy Garlic Zucchini Steaks

     

     

    These Cheesy Garlic Zucchini Steaks are a deliciously simple way to enjoy zucchini! With a blend of garlic, Italian seasoning, and melted mozzarella and Parmesan cheese, they’re bursting with flavor. This low-carb, keto-friendly dish works perfectly as a side or light main course. Ready in just 30 minutes, it’s ideal for busy weeknights or summer gatherings. A crowd-pleaser for both veggie lovers and cheese enthusiasts!

    Ingredients:

    4 medium zucchini, sliced lengthwise into halves

    2 tablespoons olive oil

    3 cloves garlic, minced

    1 teaspoon Italian seasoning

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    1 cup shredded mozzarella cheese

    1/4 cup grated Parmesan cheese

    2 tablespoons chopped fresh parsley (optional for garnish)

    Directions:

    1. Preheat the oven:

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    2. Prepare the zucchini:

    Arrange the zucchini halves on the baking sheet, cut side up.

    Use a spoon to scoop out a shallow groove in the center of each zucchini half.

    3. Season the zucchini:

    In a small bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper.

    Brush the mixture generously over the cut sides of the zucchini.

    4. Bake the zucchini:

    Bake the seasoned zucchini for 15 minutes.

    5. Add the cheese:

    Remove the zucchini from the oven and top each half with mozzarella and Parmesan cheese.

    Return to the oven and bake for another 5-7 minutes, or until the cheese is golden and bubbly.

    6. Garnish and serve:

    Sprinkle fresh parsley on top for added flavor and presentation.

    Serve warm as a side dish, appetizer, or light main course.
