500g ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
2 tbsp butter
1/2 cup chicken broth
1 cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Instructions:
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix until well blended and form into small meatballs.
- Heat olive oil in a skillet over medium-high heat. Sear the meatballs for 4–5 minutes, turning until golden brown on all sides. Remove and set aside.
- In the same skillet, melt butter. Pour in chicken broth and let it simmer for about 2 minutes to create a rich, garlicky butter sauce.
- Return the meatballs to the pan. Sprinkle generously with mozzarella cheese, then cover and cook until the cheese is melted and bubbly.
- Garnish with chopped parsley and serve hot!
