Cheesy Baked Zucchini Casserole

Ingredients:
2 medium zucchinis, thinly sliced
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (plain or Italian seasoned)
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
Fresh parsley, chopped (optional, for garnish)
Instructions:
1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
2. In a large bowl, toss zucchini slices with olive oil, garlic powder, onion powder, salt, and pepper.
3. Layer half of the zucchini slices in the prepared baking dish.
4. Sprinkle with half of the cheddar and Parmesan cheese.
5. Add the remaining zucchini slices, then top with the rest of the cheese and breadcrumbs.
6. Bake for 25–30 minutes, until the cheese is melted and bubbly with a golden top.
7. Let cool slightly. Garnish with parsley if desired. Serve warm and enjoy!
