    This Carrot Cake Coffee Cake is the perfect fusion of moist carrot cake, creamy cheesecake, and a crunchy cinnamon streusel topping. It’s an indulgent treat ideal for brunch, Easter celebrations, or any special occasion. The sweet cream cheese layer adds richness, while the grated carrots and spices bring warmth and depth to the flavor. With a soft cake base and crumbly topping, this dessert is both comforting and impressive. Easy to make and irresistible to eat, it’s a must-try for any carrot cake lover!

    Ingredients:

    For the Cinnamon Crumb Topping:

    ¼ cup (56 grams) unsalted butter (room temperature)

    ¼ cup (50 grams) light brown sugar

    ¾ cup (95 grams) all-purpose flour

    ¼ teaspoon salt

    ½ teaspoon cinnamon

    For the Carrot Cake Layer:

    1 ¼ cups (160 grams) all-purpose flour

    2 teaspoons baking powder

    ½ teaspoon salt

    1 teaspoon cinnamon (adjust to taste)

    ¼ teaspoon nutmeg (optional)

    ¼ cup (56 grams) unsalted butter (room temperature)

    ½ cup (100 grams) light brown sugar

    ½ cup (100 grams) granulated sugar

    1 large egg (room temperature)

    1 ½ teaspoons vanilla extract

    ½ cup plain yogurt

    7 oz. (200 grams) finely grated carrots

    For the Cream Cheese Layer:

    8 oz. (220 grams) cream cheese (room temperature)

    ¼ cup (50 grams) granulated sugar

    1 egg

    1 teaspoon vanilla extract

    Instructions:

    1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8 x 8-inch baking pan with parchment paper. Spray lightly with nonstick spray.

    2. Grate the Carrots: Finely grate the carrots and set aside.

    3. Make the Cinnamon Crumb Topping:

    In a small bowl, whisk together the flour, light brown sugar, cinnamon, and salt.

    Add the butter and use a fork or pastry cutter to combine until the mixture forms coarse crumbs.

    Set aside.

    4. Make the Cream Cheese Layer:

    In a medium bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth.

    Add the egg and beat until fully incorporated. Set aside.

    5. Make the Carrot Cake Batter:

    In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

    In a large bowl, cream together the butter, light brown sugar, and granulated sugar.

    Add the egg and vanilla extract, mixing until smooth.

    Gradually add the dry ingredients, alternating with the yogurt, and mix until combined.

    Fold in the grated carrots.

    6. Assemble the Cake:

    Spread the carrot cake batter evenly into the prepared pan.

    Gently spread the cream cheese mixture on top of the carrot cake batter, leaving a slight border around the edges.

    Sprinkle the cinnamon crumb topping over the cream cheese layer.

    7. Bake:

    Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean with just a few moist crumbs.

    Let the cake cool in the pan for a few minutes before transferring to a wire rack to cool completely.
