Caramel Cheesecake Bars Recipe
Ingredients:
– 2 cups graham cracker crumbs
– 1/4 cup sugar
– 1/2 cup melted butter
– 8 ounces cream cheese
– 1 1/2 cups sugar
– 2 teaspoons vanilla extract
– 4 eggs
– 1/2 cup sour cream
– 1/2 cup brown sugar
– 6 tablespoons butter
– 14 ounces sweetened condensed milk
– 2 tablespoons corn syrup
– 1 teaspoon vanilla extract
Directions:
1. Preheat the oven to 350°F (175°C).
2. For the crust, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9×13 inch baking dish coated with nonstick cooking spray. Set aside.
3. For the filling, beat cream cheese, sugar, and vanilla until smooth. Gradually add eggs, one at a time, then mix in sour cream until smooth. Pour over the prepared crust, smooth the top, and bake for 50 minutes.
4. Turn off the oven, open the door, and let the cheesecake sit in the warm oven for 15 minutes. Remove and let cool for an hour.
5. For the caramel topping, combine brown sugar and butter in a saucepan over medium heat. Stir until butter is melted and sugar is dissolved. Whisk in condensed milk, corn syrup, and vanilla, then bring to a boil, stirring continuously. Boil until the caramel reaches 225°F.
6. Let the caramel cool in the pan for 3-5 minutes, then pour over the cheesecake. Smooth and let set until cool. Cut into squares and serve. Enjoy!
