    Blueberry Cheesecake Stuffed French Toast

    The Ultimate Breakfast Treat You Need to Try!

    This indulgent blueberry cheesecake stuffed French toast combines thick slices of brioche bread with a creamy, tangy cheesecake filling and bursts of juicy blueberries. Perfect for weekend brunch, Mother’s Day, or a cozy breakfast in bed, this rich and decadent dish will leave everyone asking for seconds!

     

    Ingredients:

    1 loaf day-old brioche bread, sliced thick

    150g cream cheese, softened

    2 tbsp caster sugar

    1 tsp vanilla extract

    ½ cup fresh or frozen blueberries

    1 large egg

    ½ cup milk

    ½ cup heavy cream

    1 tsp ground cinnamon

    Butter (for frying)

    Extra blueberries, icing sugar, and maple syrup for topping

     

    Directions:

    1. Make the Cheesecake Filling:
    In a bowl, mix softened cream cheese, caster sugar, vanilla extract, and blueberries until creamy and smooth.

    2. Prep the Brioche Slices:
    Cut brioche into thick slices. Carefully create a pocket in each slice or use two slices to form a sandwich.

    3. Stuff the Toast:
    Spread a generous amount of the blueberry cream cheese mixture inside the pocket or between two slices. Repeat for all portions.

    4. Whisk the Custard:
    In a shallow dish, whisk together egg, milk, cream, and cinnamon until well blended.

    5. Cook the French Toast:
    Heat a skillet over medium heat and melt some butter. Dip each stuffed brioche sandwich into the egg mixture on both sides. Fry for 3–4 minutes per side until golden brown and crispy.

    6. Serve & Enjoy:
    Serve warm with extra blueberries, a dusting of icing sugar, and a drizzle of maple syrup.

    Cook Time: 10–15 minutes
    Total Time: 25–30 minutes
