Ingredients:
50g Carrot, peeled and grated
1 Zucchini, grated
1/2 Small onion, finely chopped (about 50g)
1 Egg
100ml Milk
1/2 tsp Salt
1/4 tsp Black Pepper
100g (2/3 cup) All-purpose Flour
Grated Cheddar Cheese (to taste)
Optional Topping:
Parmesan Cheese or Breadcrumbs for extra crunch
Fresh Herbs (parsley, thyme, or basil) for flavor boost
Instructions:
1. Preheat oven to 180°C (350°F). Grease a medium-sized baking dish.
2. In a large bowl, mix the grated carrot, zucchini, and chopped onion.
3. In another bowl, whisk together the egg, milk, salt, and black pepper.
4. Slowly stir in the flour to form a smooth batter.
5. Pour this batter into the bowl with the veggies and mix well.
6. Transfer the mixture into the prepared baking dish and top generously with grated cheddar cheese.
7. Bake for 25-30 minutes, or until golden brown and cooked through (check with a toothpick).
