    Avocado Toast with Feta and Cherry Tomatoes and Cranberries & Walnuts

     

    Looking for a quick, nutrient-packed breakfast? This Avocado Toast with Feta Cheese, juicy cherry tomatoes, sweet cranberries, and crunchy walnuts is a wholesome and tasty way to start your day! Perfect for brunch, meal prep, or a satisfying snack, this healthy avocado toast recipe is loaded with fiber, healthy fats, and protein.

     

    Ingredients:

    2 ripe avocados halved, pitted, and mashed or sliced

    2 to 4 slices of toasted sourdough bread

    1 cup cherry tomatoes halved

    ½ cup crumbled feta cheese (preferably marinated in olive oil)

    ¼ cup dried cranberries chopped

    ¼ cup walnuts chopped

    Salt and pepper to taste

    1–2 teaspoons fresh lemon juice

    Fresh herbs (optional) parsley or basil for garnish

     

    Instructions:

    1. Mash the Avocados:
    In a bowl, scoop out the avocado flesh. Mash it with a fork or slice as desired. Mix in lemon juice, salt, and pepper to enhance flavor.

    2. Toast the Bread:
    Toast your favorite sourdough slices until golden and crispy.

    3. Assemble the Toast:
    Spread the mashed (or sliced) avocado onto each piece of toasted bread.

    4. Add the Toppings:

    Arrange halved cherry tomatoes over the avocado layer.

    Sprinkle crumbled feta cheese generously.

    Add chopped dried cranberries and crunchy walnuts on top.

    Finish with salt, pepper, and a handful of fresh herbs.

     

    5. Optional Finishing Touches:
    For a gourmet upgrade, drizzle with balsamic glaze or honey. Add a poached egg or a splash of extra virgin olive oil for extra protein and flavor.
