Authentic Thai Tom Kha Gai

Made with fragrant lemongrass, galangal, kaffir lime leaves, and tender chicken in a rich coconut milk broth, this comforting Thai soup is perfect for any season!
Ingredients:
1 lb (450g) chicken breast, thinly sliced
4 cups full-fat coconut milk
3 cups chicken broth (low sodium)
2 stalks lemongrass, cut into 2-inch pieces and smashed
5–6 kaffir lime leaves, torn into pieces
3–4 slices fresh galangal (or ginger if unavailable)
200g white mushrooms or straw mushrooms, sliced
2–3 Thai bird’s eye chilies, smashed (adjust to spice level)
2–3 tbsp fish sauce (or soy sauce for vegetarian/vegan version)
1 tbsp palm sugar or regular sugar
Juice of 1 fresh lime
Fresh cilantro, chopped, for garnish
Instructions:
1. Create the aromatic broth:
In a large soup pot, combine coconut milk and chicken broth. Add smashed lemongrass, kaffir lime leaves, and galangal slices. Bring to a gentle simmer over medium heat to infuse the flavors.
2. Add the protein and veggies:
Once simmering, add sliced chicken and mushrooms. Simmer for about 10–15 minutes until the chicken is fully cooked and tender.
3. Season the soup:
Stir in smashed bird’s eye chilies, fish sauce, and sugar. Taste and adjust saltiness or sweetness as needed.
4. Finish with acidity:
Remove from heat and stir in the fresh lime juice to brighten the flavors.
5. Garnish and serve:
Serve hot, topped with fresh cilantro. Pair with steamed jasmine rice or enjoy as a light yet satisfying standalone dish.
