Authentic Spicy Menudo Rojo

Craving a bold and comforting bowl of Menudo Rojo Picoso? This spicy Mexican tripe soup recipe, made with tender pata de res (beef foot), beef tripe, and a fiery homemade red chile sauce, is a traditional favorite that warms the soul and satisfies with every bite. Perfect for cold days, family gatherings, or a Sunday hangover cure!

Ingredients:

For the Menudo:

Water (enough to fill half a large stock pot)

1 whole yellow onion

1 whole head of garlic

1 bay leaf

1 cleaned and rinsed pata de res (beef foot)

Cleaned and rinsed beef tripe (menudo)

1 to 2 cans hominy, drained and rinsed

Chile Rojo Sauce (recipe below)

Chile Rojo Sauce (Spicy Red Chile Sauce for Menudo)

This homemade red chile sauce brings the heat! It’s also perfect for chile colorado, enchiladas, and tamales.

Ingredients:

10 dried guajillo chiles

4 dried New Mexico chiles

4 spicy chile de árbol

2 garlic cloves

1/4 yellow onion

1 tsp Mexican oregano

1 tsp cumin (optional)

Kosher salt, to taste

Reserved broth from menudo

Directions:

  1. Prepare the Broth:

Fill a large stock pot halfway with water. Add the onion, garlic, and bay leaf. Bring to a rolling boil.

  1. Cook the Beef Foot:

Add your cleaned pata de res to the pot and boil for 1.5 hours. Skim off any foam that rises to the top for a clean broth.

  1. Add the Tripe:

Stir in the cleaned beef tripe (menudo) and cook for another hour.

  1. Make the Chile Rojo Sauce:

In a blender, combine the dried chiles, garlic, onion, oregano, cumin (if using), and a ladle of the hot broth. Blend until completely smooth. Note: You do not need to hydrate the chiles first — this is a personal preference.
Strain the sauce through a sieve for a silky finish.

  1. Add the Sauce & Simmer:

Pour the red chile sauce into the soup pot and continue to simmer until the tripe is perfectly tender.

  1. Add the Hominy:

Add the hominy and simmer for an additional 15 minutes. Taste and adjust salt as needed.

Serve & Enjoy!

Serve hot with chopped onions, fresh cilantro, lime wedges, and warm tortillas or crusty bolillos. This spicy Menudo Rojo is the ultimate comfort food with a kick!
