    Apple Carrot Beef Rib Soup

    Warm up with this Apple Carrot Beef Rib Soup, a protein-rich, immunity-boosting soup packed with beef ribs, carrots, apples, and ginger. Perfect for healthy dinners, cozy meals, and winter comfort food, this soup is flavorful, nourishing, and easy to make!

    Ingredients:

    For the Soup:

    – 2 tablespoons olive oil
    – 2 pounds beef ribs (bone-in or boneless)
    – 1 onion, chopped
    – 3 garlic cloves, minced
    – 2 large carrots, sliced
    – 2 apples, peeled and chopped
    – 1 tablespoon fresh ginger, grated
    – 6 cups beef broth
    – 1 teaspoon ground cinnamon
    – ½ teaspoon ground turmeric
    – 1 teaspoon salt (adjust to taste)
    – ½ teaspoon black pepper
    – 1 bay leaf
    – 1 tablespoon honey (optional)

    For Garnish:

    – Fresh parsley or cilantro, chopped
    – Crusty bread, for serving

    Instructions:

    1. Brown the Beef Ribs:
    Heat olive oil in a large pot over medium-high heat. Season beef ribs with salt and pepper. Brown ribs on all sides, 5–7 minutes, then remove and set aside.

    2. Sauté Aromatics:
    Add onion and garlic to the same pot; sauté 2–3 minutes until fragrant.

    3. Combine Ingredients:
    Add carrots, apples, ginger, beef broth, cinnamon, turmeric, salt, pepper, and bay leaf. Stir well.

    4. Simmer Soup:
    Return beef ribs to the pot, ensure they’re submerged. Bring to a boil, then reduce heat. Cover and simmer 1.5–2 hours until beef is tender.

    5. Optional Sweetness:
    Stir in honey to balance flavors.

    6. Serve:
    Remove bones, ladle soup into bowls, garnish with parsley or cilantro, and serve with crusty bread.
