    Aegean Cod with Feta and Spinach

     

    This Aegean Cod with Feta and Spinach is a delicious Mediterranean-inspired dish that combines tender cod fillets with savory feta cheese, fresh spinach, and cherry tomatoes. Seasoned with thyme, oregano, and a hint of nutmeg, this healthy seafood recipe offers bold Greek flavors in every bite. It’s an easy weeknight dinner, ready in just 30 minutes, making it perfect for busy families. Packed with protein, vitamins, and nutrients, it’s a nutritious choice that doesn’t compromise on taste. Serve with a squeeze of fresh lemon for a bright, citrusy finish.

    Ingredients:

    2 pounds cod fillets

    ½ teaspoon kosher salt

    ¼ teaspoon white pepper

    2 tablespoons extra virgin olive oil, plus more for drizzling

    1 cup sliced shallots

    1 medium garlic clove, minced

    8 ounces cherry tomatoes, halved

    2 teaspoons fresh thyme (or 1 teaspoon dried)

    1 teaspoon dried oregano

    A pinch of freshly grated nutmeg

    8 ounces baby spinach

    8 ounces feta cheese, crumbled

    1 lemon, cut into wedges for serving

    Directions:

    1. Preheat Oven: Set your oven to 350°F (175°C). Line a baking sheet with foil and lightly grease it with cooking spray or a drizzle of olive oil.

    2. Prepare the Cod: Inspect the cod fillets for any pin bones and remove them. Place the fillets on the prepared baking sheet and season both sides with kosher salt and white pepper.

    3. Cook the Veggies: Heat 2 tablespoons of extra virgin olive oil in a sauté pan over medium heat. Add the sliced shallots and cook until softened, about 3 minutes. Stir in the minced garlic, halved cherry tomatoes, thyme, oregano, and a pinch of freshly grated nutmeg. Cook for an additional 3 minutes until fragrant.

    4. Add Spinach: Toss in the baby spinach and cook until it wilts, about 2 minutes. Spread the cooked vegetable mixture evenly over the cod fillets.

    5. Top with Feta: Crumble the feta cheese generously over the fish and veggie mixture.

    6. Bake: Bake the dish uncovered for 20 minutes, or until the cod begins to flake easily with a fork. For an extra touch, broil for 2 minutes to slightly brown the feta.

    7. Serve: Drizzle a bit more olive oil over the top and serve the cod with fresh lemon wedges for a burst of citrus flavor.
