    Savory Meatloaf Cupcakes with Whipped Potato Topping

    Savory Meatloaf Cupcakes with Whipped Potato Topping

    Ingredients:

    – 1 lb (500g) ground beef
    – 1 onion, finely diced
    – 2 garlic cloves, minced
    – 1 carrot, grated
    – 1/2 cup breadcrumbs
    – 1 egg
    – 1/4 cup ketchup
    – 2 tbsp Worcestershire sauce
    – Salt and pepper, to taste
    – 2 cups mashed potatoes (prepared)
    – 1 cup shredded cheddar cheese
    – Fresh parsley, chopped (for garnish)

    Directions:

    1. Preheat the oven to 375°F (190°C) and grease a muffin tin generously.
    2. In a large mixing bowl, combine ground beef, diced onion, minced garlic, grated carrot, breadcrumbs, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until thoroughly combined.
    3. Evenly distribute the meat mixture among the muffin cups, gently pressing down to form cupcakes.
    4. Bake in the preheated oven for 25-30 minutes, or until the meatloaf cupcakes are cooked through and lightly browned.
    5. While the meatloaf cupcakes are baking, prepare the mashed potatoes if not already done.
    6. Once the meatloaf cupcakes are cooked, remove the muffin tin from the oven.
    7. Top each meatloaf cupcake with a dollop of mashed potatoes, spreading it evenly.
    8. Sprinkle shredded cheddar cheese over the mashed potatoes on each cupcake.
    9. Return the muffin tin to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
    10. Remove from the oven and allow to cool slightly before serving.
    11. Garnish with chopped parsley, if desired, and serve warm.
