    Vintage Beef and Celery Bake

This vintage beef and celery bake is an easy, comforting casserole made with tender beef stew meat, crisp celery, creamy mushroom soup, and savory onion soup mix. Inspired by old-fashioned family cookbook recipes, this hearty beef casserole recipe is ideal for busy weeknight dinners, Sunday meals, potlucks, and family gatherings.

Slow-baked in the oven, the beef becomes fork-tender while the celery softens into the rich, creamy gravy. With only four simple ingredients, this easy beef bake delivers homemade flavor without complicated preparation.

Why You’ll Love This Beef and Celery Casserole

    • Made with only 4 simple ingredients
    • A budget-friendly meal that serves the whole family
    • Tender, slow-baked beef with a creamy savory sauce
    • Perfect for meal prep, potlucks, and comforting family dinners
    • Easy to serve with mashed potatoes, rice, noodles, or vegetables
    • Great for making ahead and reheating later

    Ingredients

    • 2 pounds beef stew meat, cut into 1-inch pieces
    • 4 cups celery, sliced into ½-inch pieces
    • 2 cans condensed cream of mushroom soup, 10.5 ounces each
    • 1 packet dry onion soup mix, 1 ounce

How to Make Vintage Beef and Celery Bake

    1. Preheat the oven to 325°F (165°C). Lightly grease a 2- to 3-quart casserole dish.
    2. Place the beef stew meat evenly in the bottom of the prepared baking dish.
    3. Add the sliced celery over the beef. The celery may look like a large amount at first, but it becomes tender and flavorful while baking.
    4. In a bowl, mix the cream of mushroom soup with the dry onion soup mix until smooth.
    5. Pour the creamy soup mixture over the beef and celery. Spread it gently so the ingredients are well covered.
    6. Cover the casserole dish tightly with a lid or aluminum foil.
    7. Bake for 2½ to 3 hours, until the beef is tender and the celery is soft.
    8. Remove the cover and bake for another 10 to 15 minutes, until the sauce is bubbling and lightly golden around the edges.
    9. Let the casserole rest for 10 minutes before serving. This allows the creamy gravy to thicken.

    Serving Suggestions

Serve this creamy beef casserole over mashed potatoes, steamed rice, buttered egg noodles, or roasted potatoes. For a balanced family dinner, add green beans, peas, carrots, a fresh salad, or crusty bread.

    Tips and Variations

For a richer celery flavor, replace one can of cream of mushroom soup with cream of celery soup. You can also add sliced mushrooms for extra texture or stir in frozen peas during the final 15 minutes of baking.

Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Reheat until hot throughout before serving. This easy beef and celery casserole can also be frozen for up to 2 months.
