    Instructions

    1. Rinse the peeled and chopped potatoes under cool water, then drain well.
    2. Lightly grease the inside of a 4- to 6-quart slow cooker with a small amount of margarine.
    3. Add the potatoes to the slow cooker. Pour in the water and sprinkle with ¾ teaspoon of salt.
    4. Add 4 tablespoons of margarine over the potatoes. Cover with the lid.
    5. Cook on HIGH for 3 to 4 hours or on LOW for 6 to 7 hours, until the potatoes are very tender.
    6. Do not drain the cooking liquid. The starchy liquid helps create creamy mashed potatoes.
    7. Add the remaining 2 tablespoons of margarine and ½ teaspoon of salt. Mash the potatoes directly in the slow cooker using a potato masher, sturdy spoon, or hand mixer on low speed.
    8. If the potatoes are too thick, add hot water one tablespoon at a time until they reach your preferred consistency.
    9. Taste and adjust the seasoning. Add black pepper if desired.
    10. Serve warm with an extra small spoonful of margarine on top for a rich, comforting finish.
