    Low Carb Cheese Olive Bombs

    These easy low carb cheese olive bombs are the ultimate quick appetizer recipe crispy on the outside, gooey and melty inside, and packed with bold, savory flavor.     Ingredients (Only 3 Ingredients!)

    • 1 cup (115 g) finely shredded sharp cheddar cheese
    • 3/4 cup (85 g) grated Parmesan cheese
    • 1 cup (140 g) pitted green olives, drained and dried

    Instructions

    1. Preheat oven to 375°F (190°C). Line a baking sheet with foil.
    2. Dry the olives well using paper towels to help the cheese stick and avoid excess moisture.
    3. In a bowl, mix cheddar and Parmesan until well combined and slightly sticky.
    4. Take about 1 tablespoon of cheese mixture, flatten it, place an olive inside, and wrap the cheese completely around the olive. Roll into a smooth ball.
    5. Place on the baking sheet with space between each.
    6. Bake for 12–16 minutes until golden, bubbly, and lightly crispy.
    7. Let cool for 3–5 minutes, then serve warm and enjoy!
