A rich and flavorful one-pan chicken recipe
This braised chicken thighs recipe delivers tender, juicy chicken cooked in a creamy mustard and cider sauce. It is an easy comfort food recipe that brings deep, balanced flavors with minimal effort, perfect for a family dinner or a cozy meal at home.
Ingredients (for best flavor)
- Bone-in, skin-on chicken thighs (preferably free-range or high-quality for better taste)
- Butter
- Yellow onions
- Celery stalks
- Garlic
- Dry cider
- Broth (chicken, beef, or vegetable, preferably homemade)
- Bay leaves
- Fresh thyme
- Heavy cream or crème fraîche
- Whole grain mustard
- Salt and freshly ground black pepper
Instructions
- Season the chicken
Season the chicken thighs generously on both sides with salt and pepper. This step enhances the natural flavor of the meat. - Sear the chicken
Melt butter in a large skillet over medium heat. Sear the chicken thighs for 4–5 minutes on each side until the skin is golden and crisp. Remove and set aside.
Tip: Do not overcrowd the pan to achieve proper browning.
- Cook the vegetables
In the same pan, add the sliced onions and celery. Cook for about 10 minutes until softened. Add the minced garlic and cook for another 2 minutes. - Deglaze and braise
Preheat the oven to 180°C (350°F). Pour the cider into the pan to deglaze, scraping up the browned bits. Add the broth, bay leaves, and thyme. Return the chicken to the pan, cover, and bake for 30–35 minutes.
Tip: Slow cooking helps the chicken become tender and absorb all the flavors.
- Finish the sauce
Remove the chicken and keep warm. Stir in the cream and mustard into the sauce. Simmer on low for 3–4 minutes until the sauce thickens. Return the chicken to the pan and mix gently.
