Slow Cooker 5-Ingredient Beef and Broccoli Recipe
This slow cooker beef and broccoli recipe is my go-to for busy weeknights when I crave a takeout-style meal at home without the fuss. With only 5 simple ingredients, you pour a quick soy sauce mixture over raw beef strips, add fresh broccoli, and let the slow cooker do all the work. The result? Tender, juicy beef coated in a savory-sweet sauce and crisp-tender broccoli that’s full of flavor.
Enjoy it over steaming rice or buttery egg noodles, or pair with a fresh salad for a balanced, satisfying dinner. It’s comforting, family-friendly, and perfect for meal prep or next-day leftovers.
Ingredients (Serves 4)
1 1/2 lbs beef sirloin or flank steak, thinly sliced
1/2 cup low-sodium soy sauce
1/3 cup beef broth or water
1/4 cup packed brown sugar
4 cups fresh broccoli florets (about 1 large head)
Directions
Prepare the beef: Lay the raw beef strips in an even layer in the bottom of a 4- to 6-quart slow cooker.
Make the sauce: In a medium bowl, whisk together the soy sauce, beef broth (or water), and brown sugar until smooth and well combined.
Combine and cook: Pour the soy sauce mixture evenly over the beef. Cover and cook on Low for 4–5 hours or High for 2–2.5 hours, until beef is fork-tender.
Add broccoli: About 30 minutes before serving, stir in broccoli florets. Press them gently into the beef and sauce. Cover and cook on High for 20–30 minutes, until broccoli is bright green and crisp-tender.
Finish and serve: Stir everything together to coat the broccoli and beef in sauce. Adjust sweetness or strength of the sauce with extra brown sugar or water if needed. Serve hot over rice or noodles.
