    Slow Cooker Cowboy Soup (Hearty Crockpot Beef & Bean Soup)
    This Slow Cooker Cowboy Soup is a rich, bold, and comforting crockpot beef soup loaded with protein-packed beans, tomatoes, corn, and Tex-Mex flavors. It’s one of the best easy slow cooker dinner recipes for busy families looking for a healthy, filling, budget-friendly meal.

    Ingredients for Cowboy Soup in the Slow Cooker
    1 lb (450 g) lean ground beef

    1 onion, chopped

    2 garlic cloves, minced

    1 can (425 g) diced tomatoes

    1 can (425 g) kidney beans, drained

    1 can (425 g) pinto beans, drained

    1 can (425 g) black beans, drained

    1 can (425 g) sweet corn, drained

    1 can (280 g) diced tomatoes with green chilies

    1 can (113 g) diced green chilies

    1 packet taco seasoning

    1 packet ranch seasoning mix

    ½ cup (110 ml) beef broth

    Salt and black pepper, to taste

    Cheddar cheese, sour cream & green onions for topping

    How to Make Cowboy Soup in the Crockpot
    Brown the Beef
    In a skillet over medium-high heat, cook the ground beef until fully browned. Drain excess fat for a healthier soup.

    Add Onion & Garlic
    Stir in the onion and garlic and sauté for 2–3 minutes until fragrant and soft.

    Transfer to Slow Cooker
    Place the beef mixture into your slow cooker or crockpot.

    Add the Beans & Veggies
    Add tomatoes, beans, corn, and green chilies. These ingredients give the soup its classic cowboy-style Tex-Mex flavor.

    Season It
    Sprinkle in the taco seasoning and ranch seasoning for bold, creamy-spicy depth.

    Add Broth
    Pour in the beef broth and stir everything together.

    Slow Cook
    Cover and cook on:

    LOW for 6–8 hours

    HIGH for 3–4 hours

    Serve & Enjoy
    Taste and adjust salt and pepper. Serve hot topped with cheddar cheese, sour cream, and green onions.
