Ingredients:
For the Low-Carb Tuscan Meatballs
1 lb (≈ 450 g) ground meat (beef, turkey, or a mix)
1 large egg
½ cup grated Parmesan cheese
2 tablespoons almond flour (low-carb binder)
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt & black pepper to taste
For the Creamy Tuscan Sauce
1 tablespoon olive oil
3 cloves garlic, minced
½ cup sun-dried tomatoes (oil-drained & chopped)
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan
2 cups fresh spinach
1 teaspoon Italian herbs
Pinch of red pepper flakes (optional)
Instructions:
In a mixing bowl, combine ground meat, egg, Parmesan, almond flour, garlic powder, Italian seasoning, salt, and pepper. Shape into small meatballs.
Heat a little oil in a skillet and brown the meatballs on all sides until cooked through. Remove and set aside.
In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes, heavy cream, chicken broth, Parmesan, Italian herbs, and red pepper flakes. Simmer until slightly thickened.
Stir in the fresh spinach and cook until wilted.
Return the meatballs to the sauce and simmer for 5 minutes to absorb flavors.
Enjoy over cauliflower rice, zucchini noodles (zoodles), or vegetables for a complete low-carb meal.
