Broth Base
1 tbsp sesame oil (or any oil)

1 tsp rice vinegar or lemon juice
1 tsp honey (optional)

150–200g ramen, rice noodles, or egg noodles
1 cup sliced mushrooms
1–2 cups bok choy, spinach, or cabbage
1 carrot, thinly sliced (optional)
Fresh chili or chili flakes (optional)
Cooked chicken, tofu, or shrimp (optional protein)
Toppings
Spring onions
Lime or lemon wedge
Sesame seeds
Chili oil or sriracha (optional)

Instructions:

Heat oil in a pot over medium heat.
Add garlic and ginger; sauté 1–2 minutes until fragrant.
Stir in onions and mushrooms and cook until softened.

Pour in broth, soy sauce, vinegar or lemon juice, and honey.
Simmer for 10 minutes to develop rich flavor.
Adjust salt and pepper to taste.

Add noodles to the simmering broth and cook 3–5 minutes.
(Or cook separately to keep them firm.)

Add bok choy, spinach, or cabbage.
Toss in cooked chicken, tofu, or shrimp if using.

Ladle the broth and noodles into bowls.
Top with spring onions, sesame seeds, chili oil, and a squeeze of lime.
