    Chocolate-Dipped Strawberry Mousse Cake

    Ingredients:

    Cake Layer:
    1 box chocolate or vanilla cake mix (plus ingredients listed on the box)
    Or your favorite homemade simple cake base
    Fresh Strawberry Mousse:
    2 cups fresh or frozen strawberries
    1/2 cup sugar
    1 tbsp lemon juice
    1 cup heavy cream
    1 packet unflavored gelatin
    2 tbsp cold water
    Silky Chocolate Topping:
    1 cup chocolate chips or chopped chocolate
    2 tbsp butter or heavy cream
    Garnish:
    Fresh strawberries (whole or halved)
    Optional: extra melted chocolate for drizzling

    Instructions:

    Bake the Cake Layer
    Prepare the cake mix (or your homemade cake) in a round pan according to the instructions.
    Let cool fully, then trim the top if needed for a smooth, even surface.

    Make the Strawberry Mousse
    • Cook the berries:
    Heat strawberries, sugar, and lemon juice in a saucepan until soft.
    Blend until smooth and allow to cool slightly.
    • Add gelatin:
    Bloom the gelatin in cold water, melt gently, and stir into the warm strawberry puree.
    • Whip the cream:
    Beat heavy cream to soft peaks, then fold gently into the strawberry mixture until fluffy and light.

    Assemble the Cake
    Pour the strawberry mousse over the cooled cake layer.
    Refrigerate for at least 3 hours, or until fully set.

    Add the Chocolate Topping
    Melt chocolate with butter or cream until glossy and smooth.
    Let cool slightly, then pour over the chilled mousse and spread gently.

    Add Garnishes
    Top with fresh strawberries.
    Dip a few in chocolate for a beautiful finishing touch.

    Chill & Serve
