Ingredients for Peanut & Pecan Brittle:
1 cup unsalted butter
1 cup granulated sugar
1/2 cup heavy cream
1/4 cup light corn syrup
1 teaspoon vanilla extract
1 1/2 cups salted dry roasted peanuts
1 1/2 cups chopped pecans
1/2 teaspoon baking soda
How to Make Homemade Peanut & Pecan Brittle:
Line a baking sheet with parchment paper or grease it lightly.
In a saucepan, melt butter over medium heat.
Add sugar, heavy cream, and corn syrup; stir and bring to a boil.
Lower heat and simmer 5 minutes, stirring constantly until the mixture thickens.
Remove from heat and stir in vanilla and baking soda.
Add the roasted peanuts and chopped pecans; coat well.
Spread mixture evenly onto the baking sheet.
Cool for 1–2 hours until fully hardened, then break into pieces.
Store in an airtight container.
