Low-Carb Keto Cheese Noodle Lasagna with Beef & Mushrooms
Ingredients:
For the Cheese Noodles
2 large eggs
4 oz cream cheese (softened)
¼ cup grated Parmesan cheese
1¼ cups shredded mozzarella cheese
¼ tsp Italian seasoning
¼ tsp garlic powder
¼ tsp onion powder
For the Beef & Mushroom Filling
1 lb ground beef
8 oz mushrooms, finely chopped
1 tbsp dried minced onion
1 tsp dried oregano
1 tsp garlic powder
1 tsp dried basil
1½ cups marinara sauce, divided
¾ cup shredded mozzarella cheese
6 tbsp whole-milk ricotta cheese
1 tsp Italian seasoning
Fresh basil for garnish
Directions:
Preheat oven to 375°F (190°C).
Mix eggs, cream cheese, Parmesan, mozzarella, Italian seasoning, garlic powder, and onion powder until smooth.
Spread the mixture into a ¼-inch thick rectangle on a parchment-lined sheet.
Bake 15–20 minutes until set and lightly golden.
Let cool, then slice into strips to mimic lasagna noodles.
Brown ground beef over medium heat; drain.
Add mushrooms, dried onion, oregano, garlic powder, and basil.
Cook until mushrooms soften.
Stir in 1 cup marinara.
Spread a little marinara on the bottom of your baking dish.
Layer: cheese noodles → beef mix → ricotta dollops.
Repeat.
Top with remaining noodles, marinara, mozzarella, and Italian seasoning.
Cover with foil and bake 25–30 minutes.
Uncover and bake an extra 10–15 minutes until bubbly and golden.
Let cool slightly.
Top with fresh basil.
Slice, serve, and enjoy!
