Ingredients:
1 lb spaghetti
2 large boneless, skinless chicken breasts (about 1½ lb total)
2 tbsp olive oil
2 tbsp unsalted butter
1½ tbsp Cajun seasoning (plus extra to taste)
4 garlic cloves, minced
2 cups heavy whipping cream
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella
½ cup grated Parmesan
½ tsp smoked paprika
½ tsp black pepper
½ tsp kosher salt (or to taste)
2 tbsp fresh parsley, chopped (for garnish)
Directions:
Bring salted water to a boil, cook spaghetti until al dente, drain, and lightly toss with olive oil. Set aside.
2. Prepare the Cajun Chicken
Slice chicken breasts horizontally for thin cutlets. Pat dry and coat generously with Cajun seasoning.
Heat olive oil and 1 tbsp butter in a hot skillet. Cook chicken 5–6 minutes per side until golden and fully cooked. Rest, then slice.
Reduce heat to medium. Melt remaining butter, add garlic, and sauté 1 minute until fragrant.
Pour in heavy cream. Add Velveeta, stirring until smooth. Mix in mozzarella and Parmesan until the sauce becomes creamy and thick.
Add smoked paprika, black pepper, salt, and more Cajun seasoning for extra heat if desired.
Add cooked spaghetti to the skillet and toss to coat in the cheesy Cajun Alfredo sauce.
Top with sliced Cajun chicken, drizzle extra sauce, and sprinkle fresh parsley.
