Ingredients:

Base:
1 ½ lbs boneless, skinless chicken breasts or thighs (left whole or cut into chunks)
1 cup long-grain white rice (rinsed well)
4 ½ cups low-sodium chicken broth
1 small onion, finely diced
1 tablespoon olive oil or butter
Vegetables:
2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
1 cup diced bell peppers (any color optional for extra flavor)
Seasoning:
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon dried thyme
½ teaspoon smoked paprika (optional for depth)
Salt and black pepper, to taste
Creamy & Cheesy Mix:
½ cup milk or heavy cream
1 ½ cups shredded sharp cheddar cheese (plus extra for topping)
½ cup grated Parmesan cheese

Directions:

Season the Chicken:
