    Creamy Parmesan Italian Sausage Ditalini Soup

    Looking for the ultimate comfort food soup to warm you up on a chilly night? This Parmesan Italian Sausage Ditalini Soup is a hearty, flavorful, and creamy dish that combines savory sausage, tender pasta, and rich Parmesan cheese.

    Ingredients:

    1 lb Italian sausage (sweet or spicy)
    1 tbsp olive oil
    1 small onion, diced
    2 cloves garlic, minced
    1 (14.5 oz) can diced tomatoes, drained
    2 quarts chicken stock
    ½ cup heavy cream
    1 cup ditalini pasta
    ½ cup freshly grated Parmesan cheese
    ½ tsp dried basil
    ½ tsp dried oregano
    Salt & freshly cracked black pepper, to taste
    Fresh parsley, chopped (for garnish)

    Directions:

    In a large pot over medium heat, cook the Italian sausage until browned, breaking it into crumbles with a spoon. Remove the sausage and set aside, leaving the flavorful drippings in the pot.

    Add olive oil, diced onion, and minced garlic to the same pot. Cook until onions are soft and fragrant, about 3–4 minutes.

    Stir in the drained diced tomatoes, chicken stock, and the cooked sausage. Bring to a boil.

    Lower heat to a simmer and add heavy cream, ditalini pasta, dried basil, and oregano. Cook until the pasta is tender (about 8–10 minutes).

    Season with salt and freshly cracked black pepper. Serve hot, topped with extra Parmesan cheese and fresh parsley.
