Roasted Garlic Cheddar Cauliflower Soup
A creamy, comforting soup made with roasted garlic, sharp cheddar cheese, and tender cauliflower. Perfect for cozy nights, meal prep, or a healthy family dinner.
Ingredients:
1 large head of cauliflower, chopped
1 head garlic
2 tablespoons olive oil
1 onion, diced
3 cups vegetable broth
1 cup shredded sharp cheddar cheese
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions:
Preheat oven to 400°F (200°C). Place cauliflower and whole garlic head on a baking sheet, drizzle with olive oil, and roast for 30 minutes until golden.
In a large pot, sauté diced onion until soft and fragrant. Add roasted cauliflower, squeeze garlic cloves from their skins, and pour in vegetable broth. Simmer for 10 minutes.
Blend until smooth and creamy. Stir in sharp cheddar cheese, season with salt and pepper, and garnish with fresh parsley before serving.
