One-Pot Mughlai Lamb Curry in Silky Yogurt & Creamy Gravy

Experience the royal flavors of India with this Mughlai Lamb Curry. This one-pot lamb curry recipe features tender bone-in lamb cooked in a creamy yogurt gravy with saffron, warm spices, and ghee. A luxurious traditional Mughlai dish, perfect for family dinners or festive celebrations.

Ingredients:

2 lbs lamb (bone-in, cut into pieces)
1 cup plain yogurt (whisked)
1/2 cup heavy cream
2 tbsp ghee or oil
2 medium onions, thinly sliced
2 tsp ginger paste
2 tsp garlic paste
1/4 tsp saffron strands (optional, soaked in 2 tbsp warm milk)
1/2 tsp ground turmeric
1 tsp red chili powder
1 tbsp coriander powder
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground cardamom
Salt to taste

Instructions:

Caramelize Onions for the Curry Base Heat ghee in a pot and fry onions until golden brown.

Add Aromatics for Mughlai Flavor Stir in ginger paste, garlic paste, and spices like turmeric, chili powder, coriander, cinnamon, cloves, and cardamom.

Brown the Lamb Add the lamb pieces, searing until golden to lock in flavor.
