Ingredients:

For the Coconut-Crusted Chicken:
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
½ cup all-purpose flour
2 large eggs, beaten
1 cup shredded sweetened coconut
1 cup panko breadcrumbs
½ tsp salt
¼ tsp black pepper
Vegetable oil, for frying
For the Bang Bang Sauce:
½ cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp honey

Directions:

Prepare the coating: Place flour in one bowl, beaten eggs in another, and mix coconut, panko, salt, and black pepper in a third bowl.
Coat the chicken: Dip each chicken piece in flour, then egg, then roll in the coconut-panko mixture until fully coated.
Fry until golden: Heat oil in a skillet and fry the chicken bites in batches for 3–4 minutes per side, until golden brown and crispy. Drain on paper towels.
Mix the bang bang sauce: Stir together mayonnaise, sweet chili sauce, and honey until smooth and creamy.
Serve: Drizzle or dip the coconut chicken bites into the bang bang sauce and enjoy hot and fresh.
