Ingredients:
1 beef tongue (about 900 g / 2–3 lbs)
1 large onion, finely chopped
4 garlic cloves, minced
2 cups pureed canned tomatoes (high quality)
1–2 fresh chili peppers, finely chopped (adjust for spice level)
1 tbsp extra virgin olive oil
1 tsp smoked paprika
1 tsp cumin
Salt and black pepper, to taste
Fresh coriander (cilantro), for garnish
Directions:
Cook the beef tongue Place the tongue in a large pot, cover with water, and bring to a boil. Reduce heat and simmer for 2–3 hours until tender, skimming off any foam.
Prepare the tongue Remove from the pot, let cool slightly, peel off the tough outer skin, and slice thinly.
Make the spicy tomato chili sauce Heat olive oil in a skillet over medium heat. Sauté onion for 5 minutes, then add garlic. Stir in pureed tomatoes, chili peppers, smoked paprika, cumin, salt, and pepper. Simmer for 10–15 minutes.
Combine and finish Add sliced tongue to the sauce, stirring well to coat. Simmer for another 5–10 minutes until flavors meld.
