Ingredients for Shrimp & Crab Spring Rolls (18 Rolls)
18 rice paper wrappers
200 g shrimp (peeled and chopped)
150 g crab meat (or white fish)
100 g rice vermicelli noodles
100 g dried black mushrooms (or fresh shiitake)
1 carrot, grated
1 onion, finely chopped
2 garlic cloves, minced
2 tbsp soy sauce
1 tbsp fish sauce (nuoc-mâm)
1 tsp ginger, grated
Salt & black pepper
Oil for frying

Directions:
1. Prepare mushrooms soak, chop finely.
2. Cook noodles boil rice vermicelli, drain, cut small.
3. Mix filling shrimp, crab meat, mushrooms, noodles, carrot, onion, garlic + seasonings.
4. Roll spring rolls soften rice paper, add filling, fold, and roll tight.
5. Fry spring rolls deep fry until golden and crispy.
